The only pub I remember that used to show games early morning was The Richmond Arms. It definitely used to have the Sky games on. My Houston geography is bad (either that or my memory) but it was on a street that ran parallel to Westheimer (further out than the Galleria) and being really stupid the street might even be called "Richmond". Anyway, English pub. About the only one in Houston about 8 or 9 years ago. But, do they have Setanta? Don't know. Apologies for this useless post.
