Stovies, the great comfort food of the winter. Made with potatoes, onions, salt and pepper, and CORNED BEEF. Right?? A family member scoffs at me. He says what I make is coned beef hash. Real stovies, he says, are made with sausages. We've agreed to let the matter be settled on JKB. Who's right? After this is settled, we'll move on to climate change and world poverty. I made stovies earlier with my leftover roast from last night. It was a topside pot roast where I cooked it in red wine stock with mushrooms, thyme, and lots of garlic so the result was luxury French style stovies. Shallots instead of onions and served with crusty bread with unsalted butter. Try not to think about that though as it might put you off your lovely warming salad.
