Real stovies

I'm turning to the bright people on JKB to settle one of the weightier issues of the day.

 

Stovies, the great comfort food of the winter.  Made with potatoes, onions, salt and pepper, and CORNED BEEF.  Right??

 

A family member scoffs at me.  He says what I make is coned beef hash.  Real stovies, he says, are made with sausages.

 

We've agreed to let the matter be settled on JKB.  Who's right?

 

After this is settled, we'll move on to climate change and world poverty.

Traditionally it was whatever leftover meat you had from your Sunday roast. So beef or sausages is certainly more authentic (and tasty) than a tin of corned beef.

Sausages each and every time although corned dug is an acceptable, if poorer, substitute.

 

My Mrs makes great stovies.

Corned beef is only acceptable if it is introduced late in the game or it turns to mush. Sausage is good, roast beef better, but the best is left over lamb.

Neither corned beef nor sausages are real stovies.

 

Real stovies is leftover roast beef.

 

Onions and potatoes cooked to mush in beef dripping and plenty of salt then shreds of leftover roast beef thrown in.

Roast beef. Corned beef goes with my bubble and squeak.

There isn't a definite meat to use, it's just whatever is left over.

 

I personally would say roast beef is the real deal but had it with sausages before. Corned beef is hash in my house too!

Mrs PJ makes them with Pork & Beef link sausages. Bits of left over beef from a roast or stew is perfect as well though.

 

I think you can end up going all "cheff'y" and over thinking these things. The basics are always the way to go with grub like this.

Always thought Bon Jovis were made with corned dug?

 

Maybe different local versions across the country?

 

For the record I hated Bon Jovis tbh.  But you ate what was put down to you back in the good old days. ?

Salad? Shame. I made stovies earlier with my leftover roast from last night. It was a topside pot roast where I cooked it in red wine stock with mushrooms, thyme, and lots of garlic so the result was luxury French style stovies. Shallots instead of onions and served with crusty bread with unsalted butter. 

 

Try not to think about that though as it might put you off your lovely warming salad.

Corned Beef Onions and a wee Oxo from this house

 

I bought Stovies from a burger van a while back  and when I looked in the tub there was square sausage in it, I was fuming  and felt a tad cheated to say the least
