The Old Tolbooth Posted October 29, 2009 Share Posted October 29, 2009 Boil some pasta, slice some smoked sausage and when the pasta is ready heat the sausage in the microwave for 1m 50secs, then drain your pasta and put back into the pan with the sliced smoked sausage, and add a jar of tomato and marscaponi sauce, stir up and serve with cracked black pepper on top! Say What Again Posted October 29, 2009 Share Posted October 29, 2009 A favourite of mine for lunch - takes about 20 mins all in. 1/2 red onion 2 tomatoes 1 red chilli enough spaghetti for 1 half tin of tuna Boil the spaghetti, and while it's boiling finely chop the tomatoes and onion. Half and deseed the chilli, then finely chop that too. Chuck the chopped ingredients into a pan with some olive oil and gently heat it for a few minutes. When the spaghetti's ready, drain that and throw it in the pan with your salsa then break in half the can of tuna. Ulysses Posted October 30, 2009 Share Posted October 30, 2009 Offishul JKB Shed Lamb Chops (For 4, takes about 50 minutes) Ingredients: 4 lamb chops (gigot is fine) Small drop of vegetable oil Grated rind and juice of 1 lemon 2 tablespoons chopped fresh parsley (or 2 teaspoons dried) 1 tablespoon chopped fresh mint (or 1 teaspoon dried) 1 teaspoon sugar 200 ml stock (vegetable stock or lamb OXO) 90 ml (half glass) of red wine (preferably what you?re drinking) And: A pan with a lid, or else a pan PLUS a pot with a lid. Note: Plus whatever you'll be serving the chops with (potatoes and carrots are good, also works with pasta/rice and stuffed tomatoes). How to: Mix the lemon rind, juice, parsley, mint and sugar together in a cup/bowl and leave to one side. Heat a small drop of oil in the pan, add the chops and fry over a brisk heat until brown on both sides. Turn down the heat and do for 2-3 minutes on each side. When that's almost done, get yer stock ready. If you're a dummy like me, that means you stick your cube into a jug, add 200 mls of boiling water, mix well and tip in the half glass of wine. If using a pan with a lid: Spoon the lemon rind and herbs mixture on top of the chops, and pour in the stock. Cover the pan tightly and simmer over a low heat for 25 minutes. If using a pot, put a wee drop of oil in the bottom of it and put over a moderate heat. Transfer the chops from the pan ? one layer of 2 chops, spoon over the mixture, then do the same with the second layer of 2 chops. Pour in the stock and wine, put the lid on, lower the heat and simmer for 25 minutes. Chops (and whatever you're serving them with) on to heated plates and pour the juices on top. Notes: This tastes different with different types of wine. A big Aussie Shiraz seems to work best. Bring chicken stock to the boil Add in Kaffir lime leaves, Fish sauce, thinly sliced Lemongrass, galangal (or Ginger) and garlic then simmer for 15mins Then add *****ake Mushrooms, Red Pepper, Red chilli, Skinned and seeded tomatoes and either King Prawns or Chicken, simmer for 5-10 mins or until Prawn's/Chicken is cooked. Serve with some fresh Coriander over the top! The above is a broth type soup but if you prefer it to be thicker and creamier then you can reduce the amount of stock and add in coconut milk! caza Posted October 30, 2009 Share Posted October 30, 2009 Tandoori Chicken Nann Pizza Fry diced chicken breasts diced red onion and diced red chilli with 2 table spoons of Paktas Tandooi Curry Paste. Whilst this is cooking, spread 4 mini garlic and corrinder nann breads with tomoto puree and added sliced mozzarella cheese. Cook in the over for 5 -7 minutes until the cheese has melted. Those Philly recipes are okay, the philly is a bit sickly, the chicken one with the parma ham needs the basil to take the edge off the sweetness. I fry some mushrooms, add a little garlic and any herbs which I happen to have, then add the Philly - you can add a splash of milk to thin it down to the required consistency.
