What's your signature dish?

Been cooking lasagne all day following a handwritten recipe from my mum. Took me two attempts and five and a half hours but I just tasted it and it's great if I do say so myself. Thinking of making it my signature dish (never had one before) but I doubt I'll ever have the motivation/skill to make it like that again, probably a fluke.
