WagonWheel
Try the Fairmont St. Andrews. http://www.fairmont.com/stAndrews It's not cheap, but it's a great hotel, staff very helpful, superb food, nice pool and overall very child-friendly. Plus St Andrews is quite a good place to wander round and there is the beach, aquarium and Scottish Deer centre nearby.

Seconded I love Crieff Hydro... lots to do whatever the weather. You can usually get excellent last minute deals. Not too far a drive either from Edinburgh. I like to drive to Killin from there also.
