Our favourite pasta recipe, have it frequently and it's dead easy

Put some penne pasta onto boil

Chop some streaky bacon into smaller pieces, dry fry it (a wok is easiest for this recipe) until browning.

Throw in a chopped chilli and crushed garlic, as well as tablespoon of olive oil and fry some more

Once the bacon is browned and a little crispy, take off the heat

Add another 3 tablespoons of olive oil and the juice of 1 lemon and mix it together (it doesn't look great at this time, but bear with it)

Drain the cooked pasta and add to the pan and toss with the bacon mixture

Add a handful of chopped parsley and a handful of grated parmesan and mix

Serve with some extra parmesan grated over

The lemony, spicy taste is great and, well, bacon just makes anything better.

Having Pork chops?

Brine them first. Trust me.....you'll never not brine them again.

Made bacon, salt beef and pastrami a couple of weeks back just in time for the apocalypse. We're in a self isolation meat heaven. Baking enough bread to keep up with demand is the tricky bit!

Oh with that in mind, shout out to Great Grog, Espresso Services Glasgow and Mungoswells Mill.

Check them out if you can. All working hard to keep going.

Stilton grilled on top of pork is amazing.   And I'm not a big fan of Stilton.

I'm making a paella tonight, start at five, listening to Stuart & Tam on the radio, glass of red in hand. Get the Mrs out of the kitchen, and out of my way. I really feel relaxed when I'm cooking, but that just might be down to the wine.

OK - how much salt per volume of water, and for how long? Do you put in any pickling-spices (peppercorns, dried chilli, mustard / fennel / coriander seeds, etc.)?

Two heaped tablespoons of rock salt.

1 and a half mugs boiling water.

When most of the salt is dissolved add 1 and a half mugs cold water.

Soak the chops for a good few hours.

Good man - thanks, I'll try that. Unless it's organic and free-range (and therefore expensive), I find that pork* can often be pretty bland, so if this gives it a good bit more flavour then it'll definitely be worth doing.

I'm no cook but I made a chilli in the slow cooker using diced beef and it was bloody gorgeous.

Raking through the cupboards resulted in a find of some cans of guinness that I must have gotten in for a guest.

Might try to get hold of some cheap brisket or oxtail or other stewing beef and some cheap stewing veg and whack it all in the slow cooker.
