Yeah, but i said that rice, chips and sauces don't count. 😛

 

Being able to edit the title of the thread would have been a good addition to the kickback update.

Difficult though. When I get a Chinese I tend to order enough for an army and eat it over two days. I just like a bit of everything 🤣 Probably why I love going to Chinese buffets. Not that I've been in a while though.

Haa, i'm exactly the same, that's why i tried to narrow it down to the best 3 things.

usually make bbq spare ribs,  lemon chicken and egg fried rice, need a change

My own attempt at Shredded Chicken in Chilli Honey sauce, have it all the time. I actually enjoy it better than a takeaway.

That doesn't do it for me to be honest. It looks a lot healthier though. 

I'd post a picture of what i had last night for folk to laugh at but the file is too big.

Always boiled rice, you might not like it to start with, but stick with it and you’ll never go back. Much healthier than the fried rice. You don’t see Chinese folks eating fried rice, always boiled rice.

Thing with Chinese takeaway crispy chilli beef is its 95% coating and 5% beef inside. That’s fair enough they are looking to minimise costs and maximise margin. Have you ever cut a piece and seen how much meat is actually in there? Next to nothing.

 

You can buy from the super market what used to be called “minute” steaks. Or sometimes called frying steaks?

 

Basically they are very thin cut steaks and are perfect. 
 

Take 3 or 4 of these and with a sharp knife slice these into very thin strips. The thinner the better as they will crisp up quicker yet you will get a load more meat in your dish than any takeaway.

 

When you have all your thin strips lightly dust with plain flower and shallow fry in a wok until crispy.

 

Its a bit laborious but take your time until all the beef is fried super crispy and set aside on kitchen towel to dry off the oil.

 

In a medium sized pan add a bit of water, 1/4 of a pint of fresh orange juice (no bits), 4 or 5 table spoons of light soy sauce and 1 small bottle of sweet chilli sauce. If you have a big bottle use 3/4 of that.

 

Bring this all to the boil then simmer down to reduce consistency.

 

Add a chopped and sliced red pepper to the sauce.

 

Simmer for a good 20-25 minutes until it’s reduced right down to a sticky consistency.

 

Add the beef back to the sauce and stir in till it’s all coated in the sticky sauce and heated through.

 

Serve with rice or noodles of your choice but garnish the beef with sesame seeds.

What, in your eyes, should Kung Po chicken be?

 

I used to go to a place where I tried it and it was lovely. The chicken was in this sticky sort of dark red/orange coloured sauce much like sweet and sour, but had a little kick to it. I don't like sweet and sour, but I loved this stuff.

 

Had it in a couple of other places though and it's never been like that. Been in a darker, brown sauce, not much kick to it.

Since starting to cook all my own takeaway favourites I’ve saved a fortune on food.

 

Its also much tastier, more meat and no MSG!!

 

I tried a Jamie Oliver recipe from his Friday night takeaway show (the one on the pier) and it’s bloody amazing and very simple.

 

There is also a fantastic You Tube channel called “Wok Wednesdays” that I recommend.

 

Takes you through all the popular Chinese dishes from start to finish.

The only place I have seen this on the menu was a place in Blackhall called New Happy Palace, which moved to Granton Road. After a  quick google search it appears it is no longer in business.

 

Jong Po Chicken

 

Dice chicken breasts into cubes, roll in rice flour and fry

Fry large chopped onion pieces, tin of bamboo shoots, water chestnuts in a wok 

Add in chicken pieces

Add Hoi Sin sauce (have tried loads, Blue Dragon works best with this recipe)

 

Anyone who likes Peking Duck will love this

I always see recipes say dip it in egg before the flour but I can never be holed with the egg stage 🤣 Does it make much of a difference?

When I make the kids home made chicken nuggets I do, flour first, then egg, then breadcrumbs, as it helps bind the breadcrumbs, but for the recipe I mentioned above, I have tried both ways and the egg makes no difference, dunno if it is because you use rice flour rather than just normal though.
